Stewarding Supervisor - NoMad Singapore
OVERVIEW OF ROLE
The Stewarding Supervisor is responsible for overseeing and supervising all stewarding operations during assigned shifts, ensuring the highest standards of cleanliness, hygiene, and sanitation across all kitchen, back-of-house, and food service areas.
This role supports the Chief Steward in managing stewarding team performance, maintaining operational efficiency, and ensuring compliance with hotel sanitation standards and HACCP guidelines. The Stewarding Supervisor plays a key role in ensuring all kitchen and F&B outlets are supported with clean, safe, and well-maintained equipment at all times.
MAIN DUTIES & RESPONSIBILITIES
The main responsibilities of the Stewarding Supervisor are summarised below; however, the list is not exhaustive.
STEWARDING OPERATIONS & CLEANLINESS CONTROL
• Supervise stewarding operations during assigned shifts.
• Ensure all kitchen, banquet back-of-house areas, and stewarding sections are cleaned to the highest standards.
• Implement and monitor daily cleaning schedules across all relevant areas.
• Conduct regular inspections to ensure hygiene and sanitation standards are maintained.
TEAM SUPERVISION & TRAINING
• Guide, supervise, and support stewarding team members in daily tasks.
• Provide on-the-job training and ensure adherence to proper cleaning procedures.
• Motivate team members and ensure efficient task completion.
• Monitor team performance and ensure accountability and productivity.
EQUIPMENT, CHEMICALS & INVENTORY MANAGEMENT
• Ensure proper handling, storage, and maintenance of all kitchen and stewarding equipment.
• Maintain sufficient cleaning supplies and ensure timely requisition of chemicals and materials.
• Conduct daily and monthly inventory checks of operating equipment.
• Monitor breakage, loss, and usage of stewarding equipment and supplies.
SANITATION, SAFETY & COMPLIANCE
• Ensure full compliance with HACCP and food safety standards.
• Complete FSMS checklists and ensure all hygiene protocols are followed.
• Maintain cleanliness of dishwashing machines, polishing equipment, and related systems.
• Ensure safe working practices for all team members at all times.
COORDINATION & OPERATIONAL SUPPORT
• Coordinate with Kitchen, F&B outlets, and Banquet teams to support operational requirements.
• Ensure sufficient clean crockery, cutlery, and glassware are available for service.
• Assist other departments including service and kitchen teams when required.
• Review daily operations and ensure readiness for peak service periods.
STORAGE & HOUSEKEEPING OF BACK-OF-HOUSE AREAS
• Maintain cleanliness and organisation of stewarding storerooms and back-of-house areas.
• Ensure proper storage of all utensils, chemicals, and cleaning supplies.
• Monitor condition and maintenance of all stewarding-related equipment.
EXPECTATIONS
The Stewarding Supervisor is expected to:

QUALIFICATIONS
• Minimum Secondary School or equivalent qualification.
• At least 3 years of experience in a 5-star hotel environment.
• Minimum 2 years of supervisory experience in stewarding operations.
• Strong knowledge of HACCP and food safety standards.
• Valid health certificate (or ability to obtain one).
• Ability to lead, train, and motivate team members.
• Strong organisational and time management skills.
• Ability to work in a physically demanding, hot, and fast-paced environment.
• Positive attitude with strong sense of responsibility and teamwork.
