Scientist – Protein Engineering & Enzymology


Leverage the knowledge of Ayurveda to formulate products for common diseases (including personal care), work to identify the impact on underlying markers in the body and participate in studies to prove its efficacy


Key Responsibilities


  1. Design, engineer, screen, and optimize enzymes for targeted biochemical transformations across personal care, food, and other bio-based product platforms.
  2. Develop enzymes that perform specific functional jobs, such as converting precursors to intermediates for various activities.
  3. Apply first-principles enzymology to understand substrate binding, active-site chemistry, reaction specificity, catalytic efficiency, pH/temperature tolerance, inhibition, stability, and side-product formation.
  4. Use protein engineering tools including rational design, directed evolution, mutagenesis, sequence mining, enzyme family comparison, structural modeling, and activity screening.
  5. Identify cheaper or more scalable enzyme sources, including microbial enzymes, food-grade enzymes, plant-derived enzymes, metagenomic enzymes, or commercially available enzyme families that can be repurposed.
  6. Build enzyme assay systems to measure activity, specificity, kinetics, conversion yield, enzyme stability, substrate depletion, product formation, and unwanted by-products.
  7. Work closely with fermentation scientists to express enzymes cost-effectively in microbial hosts such as bacteria, yeast, or filamentous fungi.
  8. Translate enzyme performance into real product conditions, including pH-shifting systems, and high-solid fermentation broths.
  9. Design enzyme immobilization or reuse strategies where needed to reduce enzyme cost, improve stability, or make downstream processing easier.
  10. Generate patentable enzyme/process concepts, including novel enzyme applications, enzyme cascades, process conditions, substrate combinations, and enzyme-enabled manufacturing routes.


Skill sets

  1. Strong background in enzymology, protein biochemistry, molecular biology, or protein engineering.
  2. Hands-on experience with enzyme screening, activity assays, enzyme kinetics, and stability testing.
  3. Ability to think from substrate → enzyme → intermediate → product → side reaction → process economics.
  4. Experience with enzyme discovery tools, including BLAST, UniProt, AlphaFold/structural tools, sequence alignment, conserved residues, and enzyme family mining.
  5. Familiarity with directed evolution, rational mutagenesis, recombinant expression, cloning, purification, and enzyme characterization.
  6. Comfort with analytical methods such as HPLC, LC-MS, UV-Vis, SDS-PAGE, protein quantification, colorimetric assays, and activity-based assays.
  7. Ability to evaluate commercial enzyme options versus custom-developed enzymes from a cost, scalability, food/cosmetic safety, and IP perspective.
  8. Practical mindset for scale-up, including enzyme cost per kg product, enzyme loading, reaction time, yield, reuse, and downstream removal.
